“Vanillia” beans

This name was given by the farmers themselves so as to point out their all-white colour and their particularly sweet flavour.

In Greece, they are cultivated mostly in Preveza and in the valley of Feneos.  Their quality features differentiate them from other varieties and make them much-sought after in the market.

Their shape is oval (not kidney-shaped, like most beans), they are very small in size and have a very thin husk that helps them boil up easier and faster.

Vanillia beans are cooked with tomato or lemon as a side-dish for meat, but they are also served as a salad or as a soup (“fasolada”).
